The clay oven reaches temperatures that seal dough in seconds. Leopard spotting, golden bubbles, the Maillard reaction: ancestral chemistry no conventional oven replicates.

We climbed twenty kilometers into the land of eternal waters. At 3,580 meters, in a glacial cirque carved twenty-five thousand years ago, waits Ditkevi: the natural altar, "the place to come closer to God". Its freezing waters receive no one lightly: legend says only the pure may enter and return.
